The Special Gillardeaus are selected with the greatest care. These oysters have a regular shape, a roundness and a particular fleshiness. They acquire their inimitable taste at the end of multiple manipulations in parks and further passages in fattening basins. Characterized by a remarkable balance between sweetness and salinity, softness and crunchiness, with a permanent taste, they can only satisfy even the most demanding connoisseur.
It is the flat oyster refined in the Belòn river, its reputation, in fact, has gone around the world: it is the most sought-after oyster ever. For some time now, for greater fairness, both towards the consumer and the ancient oyster farmers of Riec sur Belòn, a small village in Brittany, the producers of this area have called their flat oysters Belòn du Belòn. The flat oysters aged on the Belòn river are distinguished by their meat with subtle woody notes, of exceptional delicacy.
Raised on the beautiful beaches of Utah Beach in Normandy, this "Special" is then aged for at least six months in the Belon River. This is how this exquisite oyster acquires a rounded shell and a silky color, crispy flesh, and a fruity flavor with hints of sugar.

60% Pinot Noir 40% Chardonnay This fantastic jewel has remained faithful to the value that inspired it back in 1876, when Luis Roederer created it specifically as a gift for Tsar Alexander II of Russia. Upon visual examination it can only be crystal clear! The foam is rich with very fine and endless bubbles. The olfactory sensations are broad, intense, reminiscent of warm bread crust, dried fruit, honey, chocolate and delicate spicy sensations. The palate is rich, satisfying with exciting focus and length. Site: Louis Roederer Champagne

ROGER BRUN GRAN CRU Rosé de Saignée - 4 Nuits Millésime 2017 RM
This is a brut nature champagne coming exclusively from the Aÿ vineyard classified as Grand Cru. It is a blanc de noirs, composed exclusively of 100% Pinot Noir grapes and the vines are exposed to the south, an optimal exposure for the ripening of the grapes at harvest. The 70?lle grapes come from young vines to provide freshness and the 30? old vines for their aromatic structure and roundness, giving the wine a good balance. The winemaking is done according to the "Rosé de Saignée" principle which consists of letting the freshly harvested grape juice macerate for 4 nights, hence the name "Rosé de Saignée", which gives the wine its bright rosé color with reflections amber On the nose and on the palate: elegant hints of citrus peel finely mixed with jelly notes of red berries such as raspberry or Plougastel strawberry or Mara des Bois. Nice hints of small red and white currants and cedar peel.

GIMONNET GONET l'etonnant BLANC DE NOIRS CHAMPAGNE
GIMONNET GONET l'etonnant BLANC DE NOIRS CHAMPAGNE
The latest champagne from the charming winemaking duo of Mesnil-sur-Oger, but this time it hails from the Marne Valley. The grapes, specifically Pinot Noir and Pinot Meunier, come from the municipalities of Troissy and Vincelle. This is a Blanc de Noirs, which stands out from the winery's other wines. It's aged in steel tanks, then spends at least 24 months on the lees (but usually longer) and has a dosage of around 5g. For Gimonnet-Gonet, it's almost sweet, as most champagnes have a dosage of 1-2g, sometimes even less. The nose reveals clear aromas of red fruits, orange zest, a hint of flowers, and even brioche. It has a certain breadth that's clearly reminiscent of a Blanc de Noirs. Juicy and fresh on the palate, with good body and a firm structure. The acidity is rather reserved, and the dosage supports the wine and ensures a dense mouthfeel. A generous wine on the palate, very refined, aromatic, with red fruits and a hint of hazelnut on the finish. In our opinion, all Gimonnet Gonet champagnes are exceptional, and this one expands the brothers' offerings with another component. As a food pairing, this champagne is definitely worth trying with red meats or stews.
Roger-Constant Lemaire's Rosé de Saignée represents a rare excellence. It is a Brut Rosé Champagne made exclusively through maceration of red grapes, without the addition of red wine. The blend is 50% Pinot Noir and 50% Pinot Meunier.
Huguenot Tassin Les Fioles Rosè is a pulpy and crunchy fruity Cuvée, supported by a beautiful minerality. This rosé Cuvée is a blend of 95% Pinot Noir and 5% Chardonnay. It is obtained through a short maceration (from 8 to 12 hours) of the juices with the skins of red grapes. Its dosage of sugars 9g/litre makes it accessible to most people and is excellent as an aperitif.

Obtained from the soft pressing of 100% Pinot Noir grapes from vineyards located in the hilly area of Erbusco, this Franciacorta Rosé signed by Enrico Gatti owes its wonderful color to a short maceration on the skins. At least 25 months of aging on the lees allow to perfectly express the very subtle verticality of Pinot Noir and confirm Enrico Gatti's great ability to understand that fresh, refined and savory soul that underlies the Franciacorta territory. Delicate coppery pink with fine and persistent bubbles, it has a fragrant nose of pomegranate, pink grapefruit and blood orange peel, then brioche with berries and mineral nuances. Taste of good structure, it is savory, fresh, extremely balanced and pierced by a subtle effervescence. The finish of crusty bread and wild strawberries is delicious and crunchy.

One of the most famous wineries in Valdobbiadene, which boasts a very long history, which began in the mid-1700s with Bartolomeo Bortolomiol, a passionate winemaker on the hills of Valdobbiadene, who passed down his love for this work to his descendants. After the war, it was Giuliano Bortolomiol who founded the current company: trained at a very young age at the famous School of Oenology of Conegliano, he dedicated himself to the recovery and rebirth of abandoned vineyards, with the dream of bringing Prosecco to very high quality levels, to be widespread and appreciated in Italy and around the world, Dream brilliantly realized and today carried forward by the four daughters Maria Elena, Elvira, Luisa and Giuliana, assisted by a competent and close-knit team of experts and collaborators. Approximately five hectares of owned vineyards, in the heart of Valdobbiadente, for which an organic cultivation project began in 2008, while a trusted network of suppliers adheres to specific internal regulations, which provides for the constant qualitative improvement of the grapes and aims to the management of vineyards with increasingly eco-sustainable methods.
Régnard Chablis Grand Régnard 2024 presents itself like a luminous film: the pale yellow and green highlights in the glass are the foregrounds that capture the attention. Its citrus aromas—orange, lemon, and grapefruit—act like a fresh and vibrant soundtrack, setting the pace from the start. On the palate, the creamy texture moves fluidly, balancing body and freshness in every note, like a perfectly choreographed piece. It is a white that combines roundness and vivacity, ideal for accompanying moments that deserve pause and admiration, as if each sip tells its own story.
Sancerre "Comte Lafond" is a label that belongs to one of the most famous French Appellations for the production of great Sauvignon Blanc-based whites. Its characteristics of mineral freshness, finesse and aromatic intensity make it perfect to accompany a refined dinner based on fish or shellfish. The Domaine Baron de Ladoucette is a historic and prestigious name in the Loire Valley region, its labels have always been a guarantee of elegance and quality. The Sancerre Baron de Ladoucette comes from magnificent vineyards cultivated along the Loire. In particular, the Sauvignon Blanc grapes used for this wine come from parcels cultivated in the territories of the municipalities of Amigny, Bue, Chavignol, Reigny and Verdigny, located on the left bank of the river. The grapes are vinified in stainless steel, very slowly and at a low temperature, to preserve the floral and fruity components of the precious aromatic endowment intact. For the aging period, no wood is used and the wine rests for about 2 years in steel, in order to enhance the varietal characteristics and the expressive purity of the Sauvignon Blanc. The Sancerre "Comte Lafond" allows you to understand the charm and the allure of this famous terroir, renowned for centuries for the production of great, elegant, intense, fresh and long-lived white wines. In the glass it has a straw yellow color with bright reflections. The bouquet opens on refined floral aromas, aromas of white fruit and nuances of field herbs and flint. The attack on the palate is of vibrant freshness, which extends towards a center of the mouth with ripe fruit, crossed by a sapidity that makes the sip lively and dynamic. The finish is characterized by a pleasant aromatic persistence.
The Pouilly Fumé by Baron de Laudocette is a pure Sauvignon Blanc, which comes from the central region of the Loire Valley, one of the most suitable areas in the world for the production of great whites. It is a refined and elegant wine, with a fresh, floral and citrus profile, with fruity notes, balsamic and mineral hints typical of the Pouilly Fumé terroir. Produced by Baron de Ladoucette, one of the historical names of the Appellation, it is a label that perfectly represents the style of the Domaine and the peculiar characteristics of the territory. The Pouilly Fumé wine comes from the Sauvignon Blanc vineyards grown at the Domaine Baron De Ladoucette along the right bank of the Loire. It is a cuvée created thanks to a careful selection of grapes from the best vineyards in the area, which have an average age of over thirty years and produce few bunches of great intensity and aromatic richness. The soils, characterized by the presence of clay, also give the wines a good structure, which favors aging with interesting evolutions of the bouquet towards the typical slightly smoky notes. After the harvest, the grapes are fermented in steel tanks with temperature control. The wine ages for a few months in steel before being bottled. The Pouilly Fumé Baron de Ladoucette represents one of the most fascinating expressions of Sauvignon Blanc, which in this territory takes on a unique and inimitable expressive guise, due to the presence of particular soils and a cool climate, but always mitigated by the presence of the Loire. In the glass it shows a straw yellow color, clear and brilliant. On the nose it opens on delicate floral aromas, citrus aromas, balsamic sensations and vegetal nuances. The sip conquers for its immediate freshness, the fruity and rich aromas of the center of the mouth and the savory and mineral closure.

CHARDONNAY 100% Albert Pic's Chablis "Saint Pierre" is a white, mineral wine with great potential produced in the Chablis area, which forms the northernmost part of the Burgundy region of France. In this area the continental climate combined with the strong temperature ranges and the peculiar characteristics of the soils, rich in marl and clayey limestone with a subsoil characterized by the presence of marine fossils dating back to over 145 million years ago, gives these wines a mineral stamp very quaint. The "Saint Pierre" is obtained from 100% Chardonnay grapes from vineyards raised with the spurred cordon method and located on the right bank of the Serein river. The cellar, born in 1755, is the oldest reality in this region and is now owned by Baron Patrick de Ladoucette. Thanks to constant work in the vineyard and the selection of the best clones, Albert Pic has managed to maintain a strong link with the territory, giving all its labels great typicality and expressiveness. The "Saint Pierre" Chablis is obtained from grapes harvested exclusively in hand and carefully selected both in the vineyard and in the cellar. The bunches brought to the cellar are destemmed, crushed and gently pressed to separate the pulp from the skins. At this point, the precise desire of the winery to characterize its products by exalting what the territory is, leads to the choice of having this Chablis carry out the alcoholic fermentation only in neutral steel or concrete containers, as well as the subsequent refinement, not to losing its vibrant, almost nervous freshness. Albert Pic's Chablis "Saint Pierre" has a very bright straw yellow color. Aromas of fresh fruit appear on the nose, including white peach and green apple, exotic fruit, floral and citric notes and then open towards iodized hints and towards notes of brioche bread. In the mouth it is pleasant and with a good structure, with a well balanced body with the great freshness that characterizes the finish of the sip. Color: Bright and brilliant straw yellow

It is an elegant and complex wine with a slightly sweet taste thanks to a low sugar residue, produced with the choice of the best Gewürztraminer grapes grown by the members of the San Michele Appiano winery in various areas of Alto Adige, in particular in the municipalities of Cortaccia, Caldaro and Appiano on the right bank of the Adige. The vineyards are located at altitudes varying between 300 and 500 meters with gravelly and clayey soil and are exposed towards the south-east. Gewürztraminer is a typical grape variety from Alto Adige and perhaps the most characteristic on this side of the Adige, in fact it is said to originate from Termeno, which is located between Cortaccia and Caldaro. It is the aromatic grape par excellence and in the mountain areas it benefits from important daily temperature variations which favor the development of aromatic substances and make the wine truly inebriating. The harvest is manual in mid-September. The best grapes are selected, which after soft pressing are cold macerated with the skins to extract maximum aromas. The alcoholic fermentation of the free-run must takes place in steel vats at a controlled temperature and the wine matures in steel for a few months until bottling.
Bibo Runge's HARGARDUN Trocken 2022 is a dry Riesling of great character, produced exclusively from hand-picked grapes from the historic Würzgarten vineyard, with breathtaking views of Hallgarten. The village was mentioned as Hargardun, meaning "flax garden," as early as 1112. Vineyard Philosophy: The grapes for this Riesling come only from select parcels and are hand-harvested to ensure the highest quality. The meticulous harvest is followed by a 24-hour skin contact extraction process. Cellar Approach: After maceration, the grapes are gently pressed in traditional French Korbpresse. Spontaneous fermentation takes place in oak barrels, where the wine ages for at least 12 months, developing structure, elegance, and complexity.
Kerner 100% Pacher Hof, probably the highest interpretation of the kerner from Valle Isarco. At least until now. It is very clear, of the color of egg white: and almost has the same texture. Rare is the vastness of the sense of smell, which quickly changes as the temperature changes: immediately the aromatic ones, tempered by a minerality reminiscent of a freshly tempered pencil. Then the evolution with a lot of grass, hay, and a parenthesis of citrus. Juicy and debated, it flows on the passage of correspondences that would be arithmetic if they were not played by a romantic and sincere poem. difficult and articulate balance between a suffused delicacy and the decisive but controlled strength, up to the prolonged, hesitant, profound end.
Gewurztraminer ''Joseph'' Hofstatter is produced exclusively with Gewurztraminer grapes grown in marly, light, well-ventilated and rapidly warming soil. The grapes are lightly pressed and the must is left in contact with the skins for a few hours. This is followed by careful pressing, the natural precipitation of sediments and fermentation at a controlled temperature. All this enhances the unique organoleptic characteristics of this wine. Visual Crystalline, straw yellow in colour, consistent. Olfactory Intense, quite complex and quite fine. Spicy-smoky notes of dried flowers and roses. Contains sulfites.
The basis of the elegant Riesling By the Glass from the Mosel is made up of grapes from the Riesling grape variety. The grapes grow under optimal conditions on the Mosel. Here, the vines sink their roots deep into the limestone and slate soils. At the time of optimum ripeness, the grapes for Riesling by the glass are harvested exclusively by hand, without the aid of coarse and less selective harvesters. After manual harvesting, the grapes quickly reach the cellar. Here they are carefully selected and pressed. Fermentation takes place in stainless steel tanks at a controlled temperature. After fermentation, Riesling By the Glass can continue to harmonize on the fine lees for several months.

The Toscana Bianco IGT "Ornellaia" by Tenuta dell'Ornellaia, aged for one year in barrels composed of 30% new oak and 70% used oak, was born from the desire to translate the exceptional qualities of a wonderful terroir not only into red wines but also into a great white wine. Pleasantly marked by a burning sun, mitigated by the Bolgheri microclimate, it is a wine of great finesse, intense and with lively olfactory notes. Absolutely not to be missed. Golden, intense and brilliant. On the nose it expresses itself with hints of ripe citrus and toasted and vanilla notes. On the palate it is broad and juicy, with a vibrant acidity and a decisive saline note.
Toscana IGT “Batar” 2021 – Querciabella Chardonnay 50%, Pinot Blanc 50% Alcohol: 14% Format: 0.75l Serving temperature: 6/8°C Bernardi Rate: 95/100 Type: White Tuscany Peculiarities: A fine Tuscan white wine as the best red wines of the region”, Batàr enjoys the cult of an iconic wine. Widely recognized by critics around the world as the quintessential Super Tuscan white and one of Italy's greatest white wines, the illustrious Hugh Johnson once described it as "a white man's dream" worthy of being compared to a Grand Cru of Burgundy. In the words of Jancis Robinson MW OBE more like a “successful Corton-Charlemagne than a Bâtard-Montrachet”. Reminiscent of Burgundy, without a doubt, but with the unmistakable Tuscan authenticity. Vintage after vintage, Querciabella's forward-thinking winemaking has evolved beyond the hedonistic idea of being able to grow foreign, albeit noble, white grapes in a red wine stronghold to focus on expressing a specific sense of place. Clearly, the intrinsic vitality and classic minerality of Batàr derive from the high altitude vineyards of Ruffoli and the Galestro soil typical of the best Chianti Classico sites. Batàr's legendary ability to defy age and improve over time requires a careful combination of selected Chardonnay and Pinot Blanc grapes, a timely microvinification regime and patient barrel maturation. The long time spent on the yeasts in top-quality French barriques allows individual batches to develop their best expression. Only when the optimal élevage is complete, the final mixture is obtained through extensive sampling. Further refinement in the bottle before marketing seals the layered texture that defines the proverbial mouthfeel of Batàr. Since 2010, much gentler contact with the lees and less reliance on new oak have defined a distinct freshness and brought citrus and exotic fruit to the fore, with creamy notes now providing a seductive backdrop. No animal products or by-products are used in the production of this wine, making it suitable for vegans and vegetarians. 14% vol 2021

It is immediately distinguished by a bright and bright straw yellow color, with golden reflections. The bouquet amazes for how its aromatic complexity is expressed with such persuasiveness; the opening is typical of the Mediterranean scrub: thyme, rosemary, helichrysum. The fruit enters later with notes reminiscent of exotic fruit and ripe fruit. Closes with a delicate citrus sensation, mixed with broom flower. The entry into the mouth is savory and delicately fresh. Its maritime character is extremely intense and enveloping. The finish is long and persistent.

Il Calzo della Vignia by Viticoltori Isola del Giglio is born in the Finocchio and Gronco vineyards of the beautiful Tuscan island, caressed by winds that smell of the sea and characterized by loose soils of granite origin. It is a wine that perfectly reflects the originality and passion that are at the base of this winemaking project. It is produced entirely with Ansonica grapes, harvested and selected manually from the two vineyards at the beginning of September. In the cellar the grapes are left to ferment and macerate on the skins for about 8 weeks. Afterwards, the wine is transferred to French wooden barriques where it matures for 6 months. It is then refined in the bottle. Il Calzo della Vignia has a golden color, slightly cloudy due to the lack of filtering. On the nose it releases a unique olfactory complexity, with notes of white flowers that delicately blend with hints of peach, mango and pineapple. This inebriating scent distantly recalls the fragrances of French Sauternes or Canadian Ice wines. On the palate it is a wine of great elegance, with fruity sensations beautifully accompanied by a good minerality, characteristic of the terroir to which it belongs. Perfect in combination with light appetizers and white meats, it also proves to be the perfect companion for fish-based dishes. Splendid meditation wine.

Vernaccia di San Gimignano Riserva DOCG 2022 - Panizzi
The Riserva di Vernaccia San Gimignano DOCG is the wine that more than others embodies the history of the Panizzi winery and its desire to excel within this denomination. ROSSO di MONTALCINO DOC “Campo ai Sassi” - Frescobaldi
The village of Castelgiocondo dominates the historic Frescobaldi estate in Montalcino from above, an ancient fortress built in 1100 to defend the road that led from the sea to Siena. A historic place, it is in fact one of the first four properties where the production of Brunello di Montalcino began in 1800. The estate is located in an ideal terroir for Sangiovese and for the great wines that are produced here: the vineyards are located at altitudes between 300 and 400 meters, the well-drained soils have a sunny and favorable south-west exposure. In the vineyard, obsessive care, high density and low yields allow the production of a great Brunello, with elegant texture and admirable longevity. Campo ai Sassi is a Rosso di Montalcino that presents the same characteristics as its older brother but in a more youthful and casual version. In fact, it is produced from the same grape variety, Sangiovese, coming from vineyards located on very deep soils which lead to fragrant and elegant wines, but less tannic than Brunello.
Harvest: Harvesting usually begins in the first ten days of September. It is done strictly by hand, selecting the best bunches in the vineyard and transporting the grapes to the winery in small crates. Vinification: Fermentation takes place at a controlled temperature (28–30°C) in stainless steel tanks, with long maceration periods (15–20 days) and alternating pumping over and delestage to maximize the extraction of coloring substances and noble tannins. Aging: The wine is aged in stainless steel vats where malolactic fermentation is completed. Color: Intense ruby red with purple highlights. Nose: The intense yet elegant aroma evokes hints of raspberry and ripe red berries; vinous when young, it evolves towards spicy sensations with age. Flavor: Generous and savory. Soft and dry on the palate. Pairings: It pairs beautifully with classic Tuscan cuisine, especially with “Cacciucco alla livornese.”

This cold pre-fermentation maceration allows us to best extract color and aromas. This is followed by fermentation at a controlled temperature (23/25 degrees) and a subsequent passage in French oak wood for approximately two months. The label represents love in its highest sense: care. The illness changed the balance of the couple forever; if it had been Cipriana who saved Nazzareno many years before, now it was him who saved her every day and who also remembered for her every moment spent together. It is a deep, rooted affection that is not afraid to say goodbye.
