Golden in color, Mario Rossi is a Pale Ale or rather, Italian Ale as the brewery defines it, made with 100% Italian raw materials. Blonde in colour, slightly veiled, the aroma is delicate on the nose; the hopping based on native Italian hops, the result of a cross between a native Italian variety and an American one used in dry hopping, gives it floral hints and resinous and spicy nuances. On the palate the sweet and gentle notes of malt balance and enrich the more bitter, soft bitterness given by the hops.
We worked together to create a historical style that has almost disappeared, based on a beer with smoky and slightly acidic notes. The cereal base is made up of half smoked wheat and half malt. The inoculation of lactic ferments gives it a acidic freshness that balances perfectly with the light smokiness of the malts. Very easy to drink despite the complexity obtained from the wood, it remains the perfect aperitif beer.
Gose produced in a traditional way. Matured 8 months in a sparkling wine barrel, fermented with mother yeast, spiced with the addition of salt. Savoury with very refreshing acidity. Pier dla Ferrata was born from in-depth historical research on ancient Gose carried out by our friend Paolo Erne. The beer is initially produced with lactic fermentation by various strains, then matured for 8 months in ex-sparkling wine barrels. The result is a light-coloured beer, extremely refreshing, with savoury notes given by the addition of salt and acidic notes given by the lactic fermentation. In the mouth it remains very dry, smooth with delicate spicy and citrus notes. Pier dla Ferrata pairs wonderfully with fish dishes, preferably fatty and shellfish, with savoury and intense flavours.
Beer resulting from maturation in wood for at least 6 months, following our Historical interpretation of Berliner Weisse, in a version with blueberry. Poured it has a light rosé color given by the fruit, fast foam and medium fizziness. Our beer when drunk shows a fun pendulum between complexity and speed of drinking, with hints of white yogurt given by lactic bacteria, red fruit, bread crust reminiscent of a sparkling wine and the complexity of the cellar with brett and vanilla from the wood. Extremely thirst-quenching, light but not banal, our Berliner lends itself to the beginning of drinking, with light aperitifs or simple bread croutons.
