Going back to being a child is something for adults. And who among us doesn't miss those memories linked to the joy of eating candy? In this new recipe we have chosen to recreate the same enjoyment we felt when we were children in eating our favorite lollipop! To do this we focused mainly on the choice of malts and their balance: Pale malt is a base that makes room for Vienna malt and Carapils malt. The first gives a strong sweet, rich and caramelized aroma while the second we use mainly to obtain a compact and persistent foam. We also add candy sugar at the end of the boil to complete our candy contained in a can! During the fermentation phase, a mix of Belgian yeasts helps us achieve the right aromatic profile: on the one hand, impressive sugary and raisined fruit notes emerge, on the other, slightly spicy notes take hold which make the drink decidedly interesting. A beer for those who want to pamper themselves and want to go back to being a child in a few sips!
Dry and drinkable body that hides a dangerously alcoholic beer. Bergamot combines with a blend of Trappist and Wit Bier yeasts which give a citrus and slightly bitter note. It always hits the mark. How it was born: strange but true, we are not lovers of the classic Tripel style, those beers usually with sweet malty and alcoholic notes, difficult to drink a whole glass of! However, we had a clear idea of how we could make this style more "drinkable", revisited according to our taste: we maintained a base tending towards sweet but balanced it with bergamot peel and coriander during the boiling phase of the must. These also contribute to making a great citrus impression from an aromatic point of view. Then we ferment the must by combining not only the Trappist, the classic yeast of this style, but also the Wit Bier yeast, which is usually used in Blanches, to obtain a spicier and more refreshing aromatic profile. Now available on a fixed line, it immediately became a reinterpretation of a Belgian style and is appreciated throughout Italy for its particularity. Beer suitable for those looking for a complex, fun and dangerous drink at the same time. The style of the label recalls the texture of bergamot which has some bullet hits on its surface.
