In this place more than fifty years ago, my grandmother Giovannina Pagnoni known as "Nina" welcomed tourists and wayfarers guests of the well-known "Albergo Italia" offering them excellent wines from our land and delicious typical dish
As then, we have resumed the family tradition to offer you great local wines accompanied by homemade dishes made exclusively with fresh products, selected at the origin, organic and controlled at every stage of the production chain. For you we have selected exclusively farmers and suppliers of local meats, meats and cheeses. We daily make top-level artisan pastas and all the typical dishes of the Ascoli tradition including that of the Great Fried For you sometimes we buy fresh fish directly from the nearby port of San Benedetto Del Tronto. We work by hand and make every dish proposed here at home, respecting local tastes and traditions. The menu represents only a series of gastronomic solutions that change from season to season, from day to day, from time to time. Do not be angry if it sometimes happens that a dish is not available because by choice, as happens in your home, we keep only small quantities of fresh food and always offer a delicious alternative to taste, made at the moment. We want our place to become your home, that here you can take the right time to taste our dishes, excellent wines and the best craft beers. Trebbiano IGT- Masciarelli Bianco "Villa Gemma"
This Bianco Colline Teatine IGT is part of the Villa Gemma line and is the result of a blend composed of Trebbiano d'Abruzzo (80%), Cococciola (15%) and Chardonnay (5%). outcome of grapes harvested between the second half of September and the first 10 days of October. After harvesting, the grapes are vinified in steel tanks, subsequently the wine matures in the same containers for a few months, after which it is bottled. It will be marketed only after another short period of aging in glass. Falerio Pecorino Doc Organic - Centanni "Pure White"
Sulphite-free, organic wine made from 87% Pecorino and 13% Pinot Grigio grapes. The grapes of this wine are harvested manually, the thermovinification takes place in the absence of oxygen and sulfur. The organic grapes are collected perfectly intact and healthy in boxes, at the right point of ripeness. The grapes are brought to the company quickly without being crushed and immediately begins processing with the use of inert gases necessary to avoid oxidation of the must. The must matures slightly on the skins in order to extract as much tannin as possible from the variety and help defend ourselves from the oxidative process. Once made clear, selected yeasts are added to the must which will carry out a natural alcoholic fermentation at a controlled temperature. After fermentation, cold is used for the clarification of the wine. When the wine has reached clarity and stability, always under inert gases, it will be bottled. All without the addition of chemicals and in particular of So2. The yeast, during alcoholic fermentation, produces small quantities of So2 as a natural self-defense. Pecorino 100%. The native Pecorino vine was recovered in the mountain hinterland, where the low yield had confined it, thanks to its high qualities that research and passion have brought to light. Ciprea was born from a discovery: a tribute to the Picena civilization and the use of shells as an ornament. Brilliant color with greenish reflections. Bouquet rich in complexity in which the aromas of yellow fruit and sage predominate. Evolution is slow and progressive and oxygenation brings out mineral notes. It is a full, persistent, elegant wine, characterized by a fresh and well balanced acidity. Good aging potential. The harvest of these grapes is manual in boxes with selection of the bunches in the first days of September, the vinification takes place with a short skin maceration is followed by fermentation in a concrete tank and a long aging on the fine lees until the following spring. Maximo "Vino Muffato 2021 "Umani Ronchi Marche Bianco igt (375 ml bottle)
Sauvignon Blanc 100% - Muffato - Maximo is a unique wine in the regional wine scene. It is created in the highest part of the Villa Bianchi estate where, thanks to the very particular climatic conditions determined by the alternation between high humidity and drier ventilation, at rather low temperatures, the Sauvignon Blanc grapes are affected by Botrytis Cinerea in its noblest form, giving this wine incredibly complex and rare flavors and aromas. The production area is that of the Verdicchio Hills north of the Marche. The very low production yield determines a unique and valuable product. In Italy there are very few producers of this type of wine. The vineyard, of approximately two hectares, is exposed to the north, on the crest of a hill 150 meters above sea level, and is planted on moderately deep, clayey-silty, calcareous soil with the presence of skeleton from alluvial deposits. The harvest is carried out by hand, with the grapes collected and transported in crates, and takes place in at least three steps, from mid-October to December. The sorting of the grapes is extremely delicate and aimed at collecting only those bunches, or portions thereof, which have reached the right level of concentration (30-35° BABO) thanks to the attack by noble rots. The winemaking takes place with the grapes being pressed whole using a small soft press. The must obtained, after static decantation, is fermented on its own yeasts at a temperature of 15°C for a month. Maximo is aged for approximately one year in small stainless steel containers before being bottled. This wine has a beautiful gold color crossed by amber reflections. The nose expresses strong aromas of honey, apricot and peach followed by aromas of ripe fig, candied fruit and citrus fruits. The flavor is rich in the mouth, where the elegant acidity fluidifies the sweetness, soft and balanced with a clear refreshing persistence, continually crossed by notes of candied fruit and honey. Meditation wine, perfect when paired with pastries, especially dry ones, and spicy cheeses. 375 ml bottle 12.5% Vol.

Verdicchio of the Castles of Jesi “Plenio” - Umani Ronchi
Riserva DOCG Classico - Verdicchio 100% - Alc. 14.00 % A wine of exceptional consistency and great refinement. The color is intense straw yellow, with golden reflections; on the nose it is fresh and penetrating, with slightly vanilla-like hints of ripe fruit, honey, bitter almond and aromatic herbs; the note of anise is typical, the hallmark of the grape variety of origin. In the mouth it has excellent correspondence to the nose: a fresh attack and pleasant roundness, balanced by alcohol, velvety, rich. The finish is very persistent, with long flavors of apple, plum and almond. Plenio is the Verdicchio Riserva Umani Ronchi, a type foreseen by the production regulations which imposes a minimum aging period of 18 months, of which at least 6 spent in the bottle. The name, from the Latin Plenum, is intended to suggest its characteristics of fullness, complexity and structure. It is a wine that can be appreciated for its long persistence and for the richness of perfumes and aromas, which combined with its great elegance, make it unique. The first vintages were produced from a plot of the Villa Bianchi vineyard, today the Plenio is the expression of a vineyard located at a higher altitude, near the village of Cupramontana, in one of the areas historically most suited to the production of Verdicchio. Lacrima di Morro d'Alba "Rubico" doc - Marotti Campi
Rubico is a Lacrima di Morro d'Alba DOC. It is proposed by Marotti Campi who is one of the absolute protagonists of the territory. Grapes harvested by hand, in September, and placed in boxes to safeguard their healthiness while waiting to reach the cellar. Then the vinification, in steel, with part of the bunches processed whole, without the classic destemming phase, and with the carbonic maceration technique. This allows us to obtain a very fresh and fruity wine, which is then added to the remaining part of the mass which instead undergoes normal vinification in contact with the skins. Then, after racking, 3 months of aging in steel tanks and a further 3 months in the bottle follow. Intense ruby red in color with violet reflections, this Lacrima has characteristic floral aromas, such as rose and violet. Then medicinal herbs, such as myrtle, and the spiciness of cinnamon. In the mouth, however, it is fresh and fruity, dry and velvety. With balsamic notes, medium body, good freshness and a pleasant tannicity. Alcohol content 13% Vol.

Montepulciano d'Abruzzo Doc - "Podere" - Umani Ronchi
Montepulciano 100%, Alc. 13% .. Ruby red wine, red violet reflections. On the nose it presents delicate aromas of plum and cherry, in the mouth it is dry, medium-bodied, with a fine texture structure and ripe plum fruit. The maceration of this wine lasts a maximum of 10 days, in steel fermenters, preceding the alcoholic fermentation first and the malolactic fermentation afterwards. Subsequently we move on to the refinement phase in steel for approximately 4 months. The wine rests for a short period in the bottle before being put on the market, the result is a highly drinkable and pleasant wine that can be accompanied by multiple preparations. Ideal when paired with Mediterranean vegetables, lamb skewers with red pepper, pasta with tomatoes, goat cheese or olive oil and pork loin with balsamic blueberry sauce.

Rosso Conero Doc - "Serrano " - Umani Ronchi
Montepulciano 85%, Sangiovese 15%, Alc. 13%. This wine has a ruby red color with violet reflections. The perfume has a vinous aroma and a clean scent of ripe sour cherry emerges that conquers the sense of smell and taste. The taste has great pulp and great roundness of flavor, combined with a good structure guarantee a pleasant drinkability. Serrano is a wine that expresses the typicality that distinguishes Rosso Conero Doc. It comes from the blend of Montepulciano and a small part of Sangiovese, both vinified with techniques aimed at enhancing fruit and pleasantness, typical of the production area near the Adriatic Sea. The harvest is carried out both by hand and by machine, in the period that normally runs from the end of September to the end of the first ten days of October. The grapes, de-stemmed and lightly pressed, are vinified in cryomaceration, a technique that aims to enhance the extraction of the fruit's primary aromas. After the alcoholic and malolactic fermentation, the wine is then aged in steel tanks for about 4-5 months. This wine has a particular vocation for stuffed pasta, grilled dishes, porchetta, game and braised meats, as well as a rich platter of seasoned and spicy cheeses.

Ciliegiolo della Maremma Toscana doc " NelTufo " - Pitigliano winery
Ciliegiolo 100%. Wine with an intense ruby red color. On the nose it is pleasantly fruity, with hints of wild berries, while on the palate it is full, with a good tannic structure and excellent harmony. Syrah Menfi doc - Planeta Maroccoli
Syrah is a noble Mediterranean grape variety that gives its best in the bright and dry places of Sicily. At about 400 meters, in an uncontaminated place - this interpretation of Syrah is born in a modern key and respectful of the characteristics of the vine. Imposing and impenetrable, it is a wine destined for long aging. VINIFICATION: The Syrah grapes from the Maroccoli vineyards were harvested by hand in 15 kg boxes and transported immediately to the cellar; here they were pressed and destemmed, then the pressed grapes were placed in a steel tank, where the alcoholic fermentation began. The grapes were moved twice a day with very short pumping over - between 12 and 18 minutes - depending on the fermentation phase, in order to respect the skin as much as possible and therefore enhance the complexity of the wine. Fermentation lasted 5 /7 days, with the temperature being kept at around 14-15 °C in the first phases, the second phase at 20-22 °C and finally, nearing its conclusion, at 25-27 °C with the interruption of refrigeration . Once the fermentation was finished, the tanks were filled with wine from the same vineyard of origin, to continue with a targeted maceration of 18/20 days with a submerged cap (skins in contact with the wine) and at the end the racking. During the twelve days of maceration the temperature is regulated around 20-22 °C, to favor the dissolution of the O² in small fractions - through micro oxygenation - in order to improve the structure and the stabilization of the anthocyanins. Malolactic fermentation is was made of steel; at the end, the wine was drawn off, racked and transferred to French oak barriques for aging for 14 months. AGING: in Allier oak barriques, 35% new, 35% 2nd passage, 30% 3rd passage. ALCOHOL CONTENT: 13.5% vol. This wine presents hints of sweet oriental spices and a slight hint of toasted cocoa, opening up space to the very clear and sunny black fruit, with more wintery notes of leather and humus. Enveloping touch reminiscent of the texture of velvet with a finish of mint and black pepper. It goes well with marinated and grilled lamb chops, accompanied with mint or even with an unorthodox parmigiana with smoked provola.

Montepulciano 100% guyot trained on hilly terrain with good exposure between 300 and 450 meters above sea level, with very low yield per hectare. The grapes are carefully selected by hand, the fermentation of the must with the skins takes place at a temperature of 22/24°C for 15/20 days in stainless steel tanks. KURNI 2020 - Marche Rosso igt - Oasi Degli Angeli
Montepulciano 100%. There is no description to describe this wine, but only pleasant emotions that will remain in the mind forever. Very low production, the Rosso IGT Kurni is produced with pure Montepulciano grapes. The very low production per hectare, a maximum of 2 bunches of grapes per vine are left, means that the wine is very rich in pigments, that the grapes are very healthy and at the same time sugary. Fermentation with maceration on the skins continues until early December, taking care to use both stainless steel and wooden barrels based on the evolution of the musts. Then we move on to the assembly of the various batches in new oak barrels for 10 months and here the only intervention will be the repeated batonnages (stirring of the lees until they resurface on the surface) to ensure that the wine is loaded with tannin, aromas and longevity. Once the first period in barriques is completed, a second follows, always making scrupulous use of new wood. The resulting wine is a real explosion of aromas. It has a beautiful deep, intense, impenetrable but still brilliant ruby-purple red color. But Kurni gives the best of itself to the sense of smell: a clear and intense sensation of morello cherry that never ends from start to finish, and then a continuous succession of plums, blackberries, blackberries, sour cherries, black cherries, roses and, when everything seems to end, here the tertiary hints of vanilla, cinnamon, liquorice, toasted wood, tobacco emerge. Every time you taste it, you feel the fear of not being able to remember all the aromas and smells it gives off. On the palate it is warm, depending on the vintage the wine varies from 14.5 to 15 degrees of alcohol: a true marvel, soft, full-bodied, well structured, intense and persistent. It is useless to talk about harmony in a wine that borders on perfection and balance of all its parts.

The idea behind its creation was to obtain grapes with greater concentration and soft tannins, thanks to interventions on the planting density and pruning, from which a Sangiovese was born, refined for the first time in barrique, assembled with non-traditional varieties, such as Cabernet Sauvignon and Cabernet Franc. Precursor of the great Tuscan reds, the Supertuscans, born from the marriage between native and international vines, Tignanello is one of those great wines that has made the history of Italian winemaking, becoming a legend. Tenuta Tignanello, where the sixteenth-century manor house and the renowned vineyards from which the wine is born are located, is located between the Greve and Pesa valleys, in the heart of Chianti Classico, exactly between the small villages of Montefiridolfi and Santa Maria a Macerata, 30 kilometers south of Florence. Tignanello is a wine with a well-defined personality, born from soft and minimally traumatic pressing and movements of the grapes, alcoholic fermentation in wooden vats and malolactic fermentation carried out in barriques. Sassicaia 2020 - Bolgheri Tenuta San Guido
Cabernet Sauvignon, Cabernet Franc. Wine with color: intense ruby red or garnet, aroma: vinous, rich and elegant, on the palate it is dry, full, robust, harmonious, with good elegant structure. The terroir of Sassicaia 2020 stands out for its diverse and composite morphological characteristics, which include calcareous areas rich in galestro, as well as the presence of stones, rocks and partially clayey soils. The production plants extend at an average altitude of between 100 and 400 meters above sea level, with a predominant exposure towards the west and south-west. A positive and predominantly warm year characterized the final stages of the seasonal cycle of Sassicaia 2020. During the autumn, abundant rainfall was recorded starting from mid-October, which lasted until the end of December. Temperatures were generally mild and sometimes above the seasonal average. Starting from February, intense cold weather occurred with temperatures approaching zero. March began with strong sea winds and rain, but with mild temperatures that favored the development of the shoots, especially of the early varieties such as Merlot. Towards the end of March, a disturbance from Russia caused a sharp drop in temperatures with tramontana winds and occasional night frosts. These weather conditions did not cause damage to the Cabernet Sauvignon vines, since it is a later variety, while in some Cabernet Franc vineyards a slight selection of the shoots was observed. April and May were characterized by mild temperatures, alternating sunny days and rainfall with seasonal average temperatures. An unusual spring that did not cause damage to the vines, but stimulated greater vegetation and production during late spring. After mid-June, the climate stabilized, offering sunny and warm days that accompanied the ripening until the harvest, despite some interruptions of rain in July and August, beneficial for the plants and without causing stress. The grapes reached full ripening slightly earlier than usual, accelerated by the beautiful sunny days. Despite a higher sugar content, the grapes were healthy and of excellent quality, with adequate phenolic ripeness, upon arrival at the cellar. The manual harvest of Sassicaia 2020 began in the first week of September, starting with the grapes from the young Cabernet Franc vineyards. Subsequently, the Cabernet Sauvignon grapes were harvested from the vineyards located at lower altitudes, until concluding in the last week of September with the hillside vineyards above 300 meters above sea level, such as the Vigna di Castiglioncello and the Vigna del Quercione.
