Tempranillo - Castilla y León. From a suitable area like Ribera del Duero, a dry tempranillo with a good acidic backbone, the six months in barrique soften it while leaving vegetal and blood orange notes.
Blend - Galicia. The blend of various native grapes and a long carbonic maceration make this wine extremely balanced and fresh. The aging in large barrels adds olfactory complexity and aromas.
Carignan/Aramon- Loire. Spontaneous fermentation with indigenous yeasts and oak aging make this wine intense and deep. A wonderful way to experience these 70-year-old native vines.
Garnacha/Pasera - Rioja. Unfiltered wine with no added sulphites. Spontaneous fermentation and preservation in glass make it a very natural product, at times unbalanced but which shows the true tradition of Rioja.
Bastarda - Galicia. Carbonic maceration and aging in French oak make this wine dry and light but with mineral and spicy notes. Proof that great Trousseau can also be obtained in Iberian territory.
Tempranillo/Syra - France. Cotes du Rhone brings us a Spanish classic with great precision. On the palate we find red fruits and a pleasant spicy finish.
Mencia/Autoctoni - Galicia. A full and fresh rosé, with a herbaceous and mineral finish and an extremely juicy taste. A cross between a full rosé and a pale red.
Dona Blanca / Godello - Galicia. Long fermentation after whole bunch maceration makes it an incredible demonstration of the sandy and calcareous soil of the Ribeira. Fresh and savory, it is softened by 8 months of barrel aging.
