Primitivo is an ancient vine grown in Puglia whose grapes ripen very early compared to other varieties. An entirely interesting peculiarity of Primitivo is that just 20 days after the harvest, this vine is able to give a good second production. By making the most of this characteristic, the Rosato di Primitivo was born, thus optimizing ancient production techniques derived from traditional Apulian viticulture. VARIETY: Primitivo NAME: IGP Puglia PRODUCTION AREA: rural area of Manduria and Sava, in the province of Taranto. TRAINING SYSTEM: spurred cordon SOIL: medium texture PLANT DENSITY AND YIELD: 4500 plants per hectare and 2.5 kg of grapes per plant HARVEST: Harvesting is done manually, generally in the last ten days of August. In the early hours of the morning the bunches are harvested and transported with particular speed to the cellar, thus avoiding the sultry heat of Salento days. VINIFICATION: After harvesting, the grapes are pressed and rest in a short cold maceration for 5-6 hours. The extraction of delicate hints and flavors of the rosé wine becomes a top priority before the soft pressing. Fermentation follows at a controlled temperature of 15-16° C MATURATION: 3 months in steel VOL.%: 12.5° alc. TASTING NOTES: Cherry pink color with bright reflections. On the nose it recalls crunchy hints of flowers and red fruits such as cherries and raspberries at the beginning of ripening. From the soft sip it offers a calibrated freshness that leads to a pleasant finish with evident fruit.

Chardonnay is the most famous white grape variety in the world, able to express differently the territories where it is grown. In Salento, Chardonnay is known for its delicate aromas that recall the well-ripened fruit, with good body and a fine freshness that praises the traditional dishes of Puglia.
Negramaro - IGP -2019, Cantine Paolo leo Considered the most famous of the native Salento vines, Negroamaro tells the identity of Salento thanks to its structure, persistence and charm. Its decisive and rustic character makes it a red wine with a romantic and persuasive sip. VINIFICATION: After harvesting, the grapes are destemmed and the pressed grapes ferment in steel at a controlled temperature of 22-24°C for 8-10 days. The fermentation is controlled so that the daily pumping overs can express the best typicality of the vine. The malolactic fermentation takes place afterwards. MATURATION: 5 months in steel VOL.%: 13° alc. TASTING NOTES: Intense ruby red color with violet reflections. On the nose it gives fragrant perceptions of ripe red fruit, currant jam and raspberries. Memories of ripe plums fade into spices of black pepper and cinnamon. On the palate it offers a pleasant volume, with well-balanced tannins and structural freshness. Appetizing finish with a particularly spicy persistence
Alceo Negroamaro Rosso Produttori Vini Manduria: red wine made from 100% Negroamaro grapes. It is aged in steel. It has an intense ruby color. On the palate it is soft, warm and with a beautiful freshness. It has a scent of fruity, floral and spicy notes with hints of rose, plum, Mediterranean scrub. PAIRING: red meat, game, cheese. SERVING TEMPERATURE: 16-18°C
The denomination Salice Salentino DOP is one of the most representative identifications of Salento. The grapes that contribute to the production of this historic wine are mainly Negroamaro blended, in small percentages, with other native Apulian red grape varieties including, mainly, Malvasia Nera. GRAPE VARIETIES: Negroamaro (85%); other native vines included in the denomination NAME: Salice Salentino DOP PRODUCTION AREA: rural area in the provinces of Brindisi and Lecce TRAINING SYSTEM: traditional Apulian sapling and counter-espalier SOIL: clayey PLANT DENSITY AND YIELD: 4500 plants per hectare and 2 .5 kg of grapes per plant HARVEST: The harvest takes place manually in the early hours of the morning. The cooler temperatures enhance the typical characteristics of the grapes. VINIFICATION: After the harvest, the destemming follows and the crushed grapes ferment at a controlled temperature of 25°C until the end of fermentation. MATURATION: 18 months in steel. VOL.%: 13.5° alc. TASTING NOTES: Ruby red color with garnet reflections. On the nose it offers fascinating black cherries, cherries and well-ripened plums. With pleasant spicy notes it demonstrates a full, soft sip with soft tannins. Voluminous finish, concludes with a vigorous bitter perception.
With a garnet color, it has a delicate and complex nose, with marked varietal notes of dried roses, plums, ripe blackberries and raisins. Rich on the palate, with black cherry jam and espresso notes and a thick, creamy texture, it's a truly round and complex wine. It goes very well with blue cheeses, lamb and game
Organic wine with a light ruby color with violet reflections. With an intense and complex aroma of red fruits, berries and undergrowth. Dry and balanced, a full-bodied wine. Rather persistent.
