Vinification and refinement: upon arrival at the cellar, the selected grapes are destemmed and softly pressed. Fermentation and maceration take place in thermo-conditioned stainless steel tanks for a period of approximately 10-15 days at a temperature of 28-30°C. Part of the Merlot and Syrah musts are maintained at lower fermentation temperatures to better preserve the varietal aromas. Malolactic fermentation is carried out partly in barriques and partly in stainless steel tanks, and ends by the end of the year for all varieties. A wine without tricks, which does not need tricks to get noticed: its pure and sincere character is enough for it, the son of a philosophy marked by experience and dedicated to authenticity and quality. Played by Montesole in the most refined and exciting way. The "grieco" grape, as it is defined in the local dialect, ripens exclusively in the vineyards grown in eight small towns in the Avellino area, including Montefusco, the place where the winery is located. These are all areas which, due to the climate, characteristics and exposure of the land, are naturally suited to the production of a refined wine with character. The vine used for its vinification is 100% pure Greco. The origin lies in the lands with the selected vineyards of the Greco di Tufo DOCG area of the province of Avellino, in central Italy. The harvest begins around the first half of October. Winemaking involves cold fermentation and maceration, soft pressing, fermentation at a controlled temperature for at least 12 days. Finally, the refinement of the wine extends for 3 months in stainless steel tanks at controlled temperatures, at least 1 month in the bottle.
