Our gluten-free doughs are made only with fine stone-ground PETRA flours. We remind our customers that the pizzeria is not a sterile environment with gluten-containing flours, therefore despite our attention to contamination we recommend buying our gluten-free only to those who are intolerant and not to those who are strongly allergic, for the latter it is always better to turn to companies that deal only with that field.
